Grown high in the misty mountains of Fujian Province, China, our Organic White Peony Tea (Bai Mu Dan / Pai Mu Tan) is harvested in early spring when the tea bushes produce their first tender growth. Each pluck consists of one downy white bud and one to two young leaves, carefully hand-picked and lightly processed to preserve the purity and character of the season’s freshest tea.
Only gently withered and slow-dried, this minimally processed white tea infuses to a soft, shimmering golden liquor with a delicate floral aroma. The cup opens with notes of peony blossom and early spring air, followed by gentle flavours of melon, young peach and fresh hay.
